The Bison in Banff opened for the first brunch since their handsome renovation today. The space is stunning! It is open and light and filled with beautiful textures. I especially loved all of the plants throughout. It feels light drenched, warm and inviting. Every detail from the reclaimed oak floor, marbled dinnerware and metallic accents are well thought out. The menu has been given a total refresh. You'll find a broader mix of cultural influences, as well as, the continued focus on Canadian cuisine and product. The stand out at brunch for me today were the cinnamon buns baked in skillets that are drenched in caramel and topped with slightly candied nuts reaching their ooey gooey goodness through finishing in the wood burning oven in a result that is perfectly not-too-sweet.
